Chef Ricardo Costa
A native of Aveiro, Ricardo Costa has been executive chef at luxury hotel The Yeatman in Vila Nova de Gaia since 2010, during which time he was awarded two Michelin stars for his work in promoting Portuguese gastronomy. Always focussing on traditional cuisine made with local ingredients, Costa brings to this new space some dishes that have featured throughout his career, such as tripas à moda de Gaia or a ultra-moist mushroom rice with truffle oil and thyme, and others that give a nod to his origins, such as a suckling pig sandwich and the chocolate ‘tripe’.
