Fava Tonka
From Leça da Palmeira, chef Nuno Castro started a small revolution in vegetarian cuisine in Portugal. His success in purveying vegetarian cuisine made (well) with seasonal ingredients from Portuguese producers and almost nothing wasted was enough to make Fava Tonka one of the most interesting restaurants to emerge in Portugal in recent times. It is the country’s first exclusively vegetarian restaurant to be part of a Time Out Market; here it presents iconic dishes such as mushroom toast à Bairrada (made with a sauce recalling the famous suckling pig dish), breaded oyster mushrooms and an endive, beetroot and black garlic salad.
